Rich, fluffy and sweet, and contributes to your daily fruit intake as well as being rich in calcium and protein. In fact so healthy you could eat it for breakfast!
Serves 6, 110 Calories and 0.5g fat per serving (350 Calories and 25g fat per serving of a full-fat banana mousse)
- 2 ripe bananas, chopped
- 225g low fat cottage cheese
- 250g pineapple, chopped (or a 425g can pineapple chunks in juice, drained)
- 60ml warm water
- 1 tbsp. powdered gelatine
- 2 egg whites
Place the chopped bananas and pineapple in a food processor with the cottage cheese and blend until smooth, reserving some of the fruit pieces for decoration.
Put the warm water in a bowl and sprinkle on the gelatine, and keep stirring until it is completely dissolved.
In a large bowl whisk the egg whites to a stiff peak, then fold in the fruit mix and gelatine.
Transfer to one large or six individual serving dishes and refrigerate until set.
Top with the remaining fruit pieces before serving.
